Chaat Papdi

Chaat Papdi is a popular Indian street food that combines crispy fried dough wafers (papdis) with a medley of toppings like spiced potatoes, chickpeas, yogurt, and chutneys. It’s a delicious mix of flavors and textures, perfect for a snack or appetizer. Here’s how to make it:

Chaat Papdi

Ingredients:

For the Papdi (Crispy Wafers):

  • 1 cup all-purpose flour
  • 1/4 cup semolina (sooji)
  • 2 tbsp oil or ghee
  • 1/2 tsp carom seeds (ajwain)
  • Salt to taste
  • Water, as needed
  • Oil for frying

For the Chaat:

  • 1 cup boiled potatoes, diced
  • 1/2 cup boiled chickpeas
  • 1 cup plain yogurt, whisked
  • 1/2 cup tamarind chutney
  • 1/4 cup green chutney (mint-coriander chutney)
  • 1/2 tsp roasted cumin powder
  • 1/2 tsp chaat masala
  • 1/2 tsp red chili powder (adjust to taste)
  • 1/2 cup sev (thin crispy chickpea noodles)
  • Fresh coriander, chopped, for garnish
  • 1 small onion, finely chopped (optional)
  • Pomegranate seeds for garnish (optional)
  • Salt to taste

Instructions:

  1. Make the Papdi:
    • In a large mixing bowl, combine all-purpose flour, semolina, carom seeds, and salt. Add the oil or ghee and mix well until the mixture resembles breadcrumbs.
    • Gradually add water and knead into a firm dough. Cover the dough and let it rest for 15-20 minutes.
    • Divide the dough into small balls. Roll each ball into a thin circle (about 2-3 inches in diameter). Prick each papdi with a fork to prevent them from puffing up while frying.
    • Heat oil in a deep pan over medium heat. Fry the papdis in batches until they are golden brown and crispy. Drain on paper towels and let them cool.
  2. Assemble the Chaat:
    • Arrange the papdis on a serving plate or platter.
    • Top each papdi with a spoonful of diced boiled potatoes and boiled chickpeas.
    • Drizzle whisked yogurt over the top, followed by tamarind chutney and green chutney.
    • Sprinkle roasted cumin powder, chaat masala, red chili powder, and salt over the chaat.
    • Add a generous amount of sev over the top for crunch.
    • Garnish with chopped coriander, chopped onions, and pomegranate seeds, if using.
  3. Serve:
    • Serve the Chaat Papdi immediately to enjoy the crispiness of the papdis with the flavorful toppings.
